Leviathan II is a showey display of the almost totally unexplored realm of “new world peat” — Fermented from barley smoked with peat harvested from a Canadian evergreen forest. Leviathan II has been heavily smoked with peat cut from the upper layers of an Alberta peat bog. This peat is unique to whiskey making – loaded with conifer and pine roots. Expect a whole new peaty experience with the intense smoke of a raging campfire augmented by bitter coffee and chocolate. At 110 ppm, Leviathan II is one of the world’s most heavily peated whiskeys.

Nose: With a little wood smoke and a hint of sulphur.

Palate: Again, the green peatiness, smoky and toasted notes.

Finish: Reasonably long with plenty of toast and smoke – and it’s dry.
