Inspired by the smoking of hardwoods to create different aromas and flavors in food, Noe has applied that same method to the whiskey-making process, using unique wood staves and barrel techniques for Chapter 6. Little Book Chapter 6: “To The Finish” is a blend of five American Whiskeys: 4 year old Straight Malt Whiskey finished with cherrywood staves; 4 year old Straight Malt Whiskey finished with applewood smoked barrels; 4 year old Straight Malt Whiskey finished in hickory smoked barrels; 4 year old Straight Malt Whiskey finished with maplewood staves; 5 year old Kentucky Straight Bourbon Whiskey.

Little Book Chapter 6: To the Finish Tasting Notes

Nose: sweet caramel with a hint of BBQ smoke.

Palate: flavors of rich toasted grain with hints of smoke.

Finish: medium finish with sweet tones.
